{"id":1164,"date":"2021-08-02T16:46:00","date_gmt":"2021-08-02T14:46:00","guid":{"rendered":"https:\/\/dev.adfr.it\/dimarco\/?p=1164"},"modified":"2025-04-01T16:00:47","modified_gmt":"2025-04-01T14:00:47","slug":"cuisine-from-around-the-world-with-marcos-longpast-flours","status":"publish","type":"post","link":"https:\/\/www.dimarco.it\/en\/news\/cuisine-from-around-the-world-with-marcos-longpast-flours","title":{"rendered":"Cuisine from around the world with Longpast Di Marco flours"},"content":{"rendered":"<p><em>Longpast is the Di Marco flour line that offers excellent performance with many recipes, even those less traditional for Italian cuisine, such as pita.<br><br><\/em><strong>Discover the world <\/strong>through cooking is one of the most fun and rewarding experiences we can have: food can tell a lot about the history of a country and can reserve unexpected surprises about the customs and culture of a population.<\/p>\n\n\n\n<p>The restaurant world has long understood the benefits of experimenting with different local cuisines, often giving rise to original and delicious ethnic mixes. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">DOUGH AND ETHNIC CUISINE<\/h2>\n\n\n\n<p>Especially when it comes to dough, baked goods and bread making, cooking has no clear boundaries: this is the case, for example, of <strong>pitta<\/strong>, the wheat flour bread that we are commonly used to seeing served together with <em>doner kebab<\/em>, a typical Turkish meat-based dish.<\/p>\n\n\n\n<p>Pita is a baked product that is common to many <strong>Mediterranean and North African countries<\/strong>T\u00fcrkiye, Greece, Libya, Syria, Palestine, Albania, Lebanon, Jordan are the countries where we most easily find products similar to pita, but even in Italy we have at least two similar recipes.<\/p>\n\n\n\n<p>The word \u201cpita\u201d for example is very close to the Romagna term <em>\u201cp\u00ecda\u201d<\/em>(and its variants \u201cpi\u00ea\u201d, \u201cpi\u00e8da\u201d), which indicates the <strong>flatbread<\/strong>, of Byzantine origin. The Calabrese \u201c seems to have the same etymology<em>pitta\u201d<\/em>, a white bread shaped like a flattened donut<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">LONGPAST, DI MARCO FLOURS ALSO IDEAL FOR PITA<\/h2>\n\n\n\n<p>As experts in the world of baked goods, we know how professionals in the sector are always looking for new recipes: so over time, foods such as pita have found their special place in the restaurant business, especially in the panorama of <strong>street food<\/strong>.<\/p>\n\n\n\n<p>To meet market demands, we have therefore thought of creating <strong>Long past<\/strong>, a line of high-performance flours that could give exceptional results even when making non-traditional but ethnic recipes such as pita for kebabs.<\/p>\n\n\n\n<p>They are mixes of soft-durum wheat and soy flours which, thanks to the action of the incorporated dried sourdough (also called \u201cbiga\u201d), allow for obtaining a highly digestible product without long leavening in the fridge.<\/p>\n\n\n\n<p>In respect of the cultures from which recipes such as that of pita are borrowed, we have obtained for our flours both <strong>Halal certifications <\/strong>for the needs of Muslim consumers that <strong>Kosher certifications <\/strong>for Jewish cuisine.<\/p>\n\n\n\n<p>And you, what recipes from other countries do you like to cook?
