El bacalao es popular en la cocina romana y, en Trastevere, es el protagonista de las cartas de muchos bares y restaurantes. <\/p>\n\n\n\n<p>Como maridaje hemos pensado en otro producto t\u00edpico del Lacio, la Ricotta Romana DOP, un queso blando con una marcada nota dulce que contrasta muy bien con la salinidad del bacalao. <\/p>\n\n\n\n<p>Si a esto le a\u00f1adimos el toque crujiente que aporta la base precocida para Pinsa Romana Classica elaborada por la empresa Di Marco, inventora de la Pinsa Romana, el excelente resultado est\u00e1 garantizado. <\/p>\n\n\n\n<p>La masa de esta base, elaborada a mano por los expertos artesanos pinsaioli de la empresa Di Marco, est\u00e1 realizada con una mezcla de harinas de trigo, soja y arroz que, junto con la larga fermentaci\u00f3n de 72 horas, garantiza un producto fragante, ligero y muy digestible.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">INGREDIENTES<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g de bacalao<\/li>\n\n\n\n<li>100 g de harina 00<\/li>\n\n\n\n<li>100 g de Ricotta Romana DOP<\/li>\n\n\n\n<li>Aceite de semillas al gusto<\/li>\n\n\n\n<li>1 lim\u00f3n org\u00e1nico<\/li>\n\n\n\n<li>Aceite EVO<\/li>\n\n\n\n<li>Agua con gas al gusto<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">PREPARACI\u00d3N<\/h2>\n\n\n\n<p>Para dar vida a esta original expresi\u00f3n de romanidad, s\u00f3lo hay que seguir unos sencillos pasos que os har\u00e1n sentir inmediatamente como si estuvierais en una Vespa por los callejones de Trastevere. <\/p>\n\n\n\n<p>Primero, hay que remojar el bacalao en agua durante al menos 24 horas, cambi\u00e1ndola cada 7 horas. De esta forma, se desalar\u00e1 el producto. Luego, mezclar el agua carbonatada y la harina en un bol hasta obtener una masa suave, espesa y uniforme. <\/p>\n\n\n\n<p>Ahora hay que fre\u00edr el bacalao, previamente cortado en trozos y rebozado, en aceite muy caliente durante 10-15 minutos hasta que tenga un aspecto dorado y crujiente.<\/p>\n\n\n\n<p>Y ahora viene la parte divertida: coger la Pinsa y extender una capa de ricotta fresca sobre la que colocaremos los trozos de bacalao escurridos. Sazonar todo con aceite de oliva virgen extra, una pizca de pimienta negra y ralladura de lim\u00f3n. \u00a1Y listo! \u00a1La Pinsa Romana Trastevere est\u00e1 servida!<\/p>\n\n\n\n<p>El consejo es acompa\u00f1ar tu Pinsa con una <strong>vino local<\/strong> Que realza sus sabores.
