La funci\u00f3n del agua es aportar ligereza a la masa e interactuar con las diferentes harinas de la mezcla, de las que dependen el color, el aroma y la consistencia de las bases de pizza y pinsa.  <br>De hecho, en lo que se refiere al mundo de la reposter\u00eda, por lo general, en las pizzas <strong>una masa altamente hidratada<\/strong>permite obtener una pizza m\u00e1s ligera y digerible en comparaci\u00f3n con una masa menos hidratada. <br>Dependiendo de si el producto a elaborar es una pinsa, una pizza redonda, en sart\u00e9n o con pala, la cantidad de agua utilizada en la masa ser\u00e1 diferente. Por ejemplo, en el caso de la Pinsa Romana elaborada con la mezcla Di Marco, la cantidad de agua necesaria es mucho mayor que la media: 800 g por cada kg de harina.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">TEMPERATURA DEL AGUA<\/h2>\n\n\n\n<p>Por supuesto, en una masa muy hidratada como la de Pinsa Romana, no basta con verter el agua y esperar a que haga efecto: el truco tambi\u00e9n est\u00e1 en la<strong> temperatura<\/strong>De hecho, usar agua muy fr\u00eda, guardada en el refrigerador o tras un breve periodo en el congelador, puede ayudar a obtener un mejor resultado. <br>De esta manera la malla de gluten se formar\u00e1 m\u00e1s f\u00e1cilmente, evitando que la masa suba demasiado r\u00e1pido y desarrolle acidez.<br>Si, como hemos dicho, el agua es uno de los ingredientes clave para que la masa de pinsa sea tan ligera y digerible, tambi\u00e9n debemos admitir que sus beneficios no terminan ah\u00ed. De hecho, el agua tambi\u00e9n ayuda a... <strong>disolver los grumos en la masa<\/strong> y, durante la cocci\u00f3n, la harina de arroz retiene algo de agua para mantener la suavidad interna, mientras que el exterior debe secarse bien para lograr el crujido cl\u00e1sico al cortarlo o morderlo. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">LA ELECCI\u00d3N DE LOS CONDIMENTOS<\/h2>\n\n\n\n<p>En t\u00e9rminos m\u00e1s generales, al hablar de agua, debemos considerar el agua contenida en los ingredientes. Una pizza demasiado h\u00fameda se reconoce cuando, al morder una porci\u00f3n, la punta cae repentinamente hacia abajo, derramando todos los ingredientes sobre el plato. <br>De hecho, la pulpa de tomate y la mozzarella contienen mucha agua, mientras que los embutidos o los quesos curados contienen menos. Desde el nivel adecuado de <strong>humedad <\/strong>La hidrataci\u00f3n de la pinsa (o pizza), tanto de la masa como de los ingredientes, depende del resultado final.
