La bonne r\u00e9ponse tient en un mot\u00a0: <strong>levain<\/strong>.<\/p>\n\n\n\n<p>Quand on parle de ce processus, on pense imm\u00e9diatement \u00e0 <strong>temps d&#039;attente <\/strong>ce qui est n\u00e9cessaire pour la p\u00e2te <a href=\"https:\/\/www.dimarco.it\/fr\/nouvelles\/preparer-la-pinsa-romaine-originale-levain-et-maturation\/\">pour atteindre la bonne maturation<\/a>: c&#039;est pr\u00e9cis\u00e9ment sur ce point que diff\u00e8rent les deux m\u00e9thodes de levage dont nous allons parler ici, celle avec <strong>levain <\/strong>et celui avec <strong>char<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Qu&#039;est-ce qu&#039;une p\u00e2te au levain ?<\/h2>\n\n\n\n<p>Le <strong>levain<\/strong>, \u00e9galement appel\u00e9e levure naturelle, est la plus ancienne utilis\u00e9e pour la fabrication du pain : le processus de fabrication prend du temps, mais seuls deux ingr\u00e9dients sont n\u00e9cessaires, l&#039;eau et la farine, m\u00eame si <strong>Certaines recettes n\u00e9cessitent l\u2019ajout de sucre, de yaourt ou de miel.<\/strong><br><br>On p\u00e9trit l&#039;eau et la farine jusqu&#039;\u00e0 obtenir une consistance homog\u00e8ne\u00a0: la p\u00e2te obtenue, g\u00e9n\u00e9ralement une petite boule, est laiss\u00e9e \u00e0 reposer dans un r\u00e9cipient en verre, initialement ouvert et recouvert au maximum d&#039;une gaze ou d&#039;un film plastique. En effet, c&#039;est l&#039;air qui cr\u00e9e la formation de la p\u00e2te. <strong>des micro-organismes qui vont faire m\u00fbrir la p\u00e2te. <\/strong><br><br>Il est n\u00e9cessaire p\u00e9riodiquement de \u00ab<em>rafra\u00eechir<\/em>&quot; le compos\u00e9 <strong>avec plus d&#039;eau et plus de farine pour garder la levure en vie<\/strong>, qui peuvent ensuite \u00eatre utilis\u00e9s dans les quantit\u00e9s n\u00e9cessaires pour faire du pain et d\u2019autres produits de boulangerie.<br><br>La levure naturelle a la particularit\u00e9 de donner \u00e0 la p\u00e2te <strong>une saveur complexe et un ar\u00f4me riche<\/strong>, mais il est essentiel de le traiter et de le conserver avec le plus grand soin.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Qu&#039;est-ce que biga ?<\/h2>\n\n\n\n<p>Alors, qu&#039;est-ce que la biga\u00a0? Contrairement au levain, c&#039;est une pr\u00e9-p\u00e2te (une p\u00e2te ferment\u00e9e). <strong>fait de farine, d&#039;eau et de levure<\/strong>:il a une hydratation d&#039;environ 50% et est pr\u00e9par\u00e9 la veille et m\u00e9lang\u00e9 avec la nouvelle p\u00e2te pour le lendemain. <br><br>La biga garantit la p\u00e2te <strong>une lev\u00e9e plus rapide<\/strong>: son nom d\u00e9rive en effet des \u00ab bighe \u00bb, les anciens chars romains utilis\u00e9s en guerre, pr\u00e9cis\u00e9ment parce qu&#039;il a la propri\u00e9t\u00e9 de \u00ab tra\u00eener \u00bb la p\u00e2te vers une maturation optimale.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Que signifie p\u00e2te indirecte (avec biga) ?<\/h3>\n\n\n\n<p>Lorsqu&#039;on utilise du biga, on parle de levage avec <strong>p\u00e2te indirecte<\/strong>, qui comporte donc deux phases : dans la premi\u00e8re, on pr\u00e9pare une pr\u00e9-p\u00e2te (<em>d\u00e9marreur<\/em>) qui est pr\u00e9cis\u00e9ment la biga, dans la deuxi\u00e8me phase cette pr\u00e9-p\u00e2te d\u00e9j\u00e0 lev\u00e9e est utilis\u00e9e et <strong>les portions restantes d&#039;ingr\u00e9dients sont ajout\u00e9es<\/strong> (plus de farine et d&#039;eau, de sel et, si n\u00e9cessaire, d&#039;huile).<\/p>\n\n\n\n<p>Nous aurons donc deux lev\u00e9es\u00a0: la premi\u00e8re dans la p\u00e2te pr\u00e9liminaire et la seconde, qui sera la lev\u00e9e finale. La biga l\u00e8ve de 6 \u00e0 24\u00a0heures selon les endroits o\u00f9 la p\u00e2te repose\u00a0:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>6 heures<\/strong> \u00e0 temp\u00e9rature ambiante;<\/li>\n\n\n\n<li><strong>24 heures<\/strong> au r\u00e9frig\u00e9rateur en utilisant la technique du froid.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Les avantages de l&#039;utilisation du biga en p\u00e2tisserie<\/h2>\n\n\n\n<p>Demandons-nous, \u00e0 ce stade, pourquoi utiliser une p\u00e2te avec biga : quels sont ses avantages ?  <\/p>\n\n\n\n<p>Le biga contribue \u00e0 <strong>d\u00e9velopper la saveur du pain et am\u00e9liorer l&#039;alv\u00e9olisation de la mie<\/strong>Ce proc\u00e9d\u00e9 favorise le d\u00e9veloppement de saveurs complexes et profondes, conf\u00e9rant au pain un parfum et une d\u00e9licatesse uniques.
