En moyenne, on compte une pizzeria pour 10\u00a0000 habitants. <\/p>\n\n\n\n<p>Les pinseries, \u00e9videmment, sont beaucoup moins nombreuses : les statistiques les plus r\u00e9centes, qui remontent cependant \u00e0 quelques ann\u00e9es, parlent d&#039;environ <strong>5 000 dans le monde<\/strong>. Nous vous expliquons pourquoi, selon nous, il s\u2019agit d\u2019une belle opportunit\u00e9 pour les restaurateurs.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le march\u00e9 de la pizza continue de cro\u00eetre<\/h2>\n\n\n\n<p>\u00c0 partir de la pizza, une recherche tr\u00e8s int\u00e9ressante de <a href=\"https:\/\/medium.com\/@Sam.walter\/europe-pizza-market-size-demand-price-analysis-revenue-share-report-2024-32-6d377c451a80\">Groupe IMARC<\/a> Il affirme que le march\u00e9 europ\u00e9en est en pleine expansion et qu\u2019il peut <strong>cro\u00eetre en moyenne de 1,5% par an d&#039;ici 2032<\/strong>. Les raisons sont tr\u00e8s int\u00e9ressantes : la croissance du march\u00e9 serait attribuable, au moins en partie, \u00e0 la \u00ab<em>demande croissante de plats pr\u00e9par\u00e9s et rapides, une tendance acc\u00e9l\u00e9r\u00e9e par le mode de vie tr\u00e9pidant de la population europ\u00e9enne<\/em>&quot;.<\/p>\n\n\n\n<p>Comme d\u2019habitude, il existe des diff\u00e9rences normales et physiologiques entre un pays et un autre, <strong>mais la pizza a du succ\u00e8s partout.<\/strong> Par exemple, selon <a href=\"https:\/\/datassential.com\/resource\/pizza-italian-trends-2024-europe\/\">Donn\u00e9es essentielles<\/a> En France, 7 consommateurs sur 10 mangent au moins une pizza par mois, et m\u00eame 8 sur 10 en Allemagne et en Espagne. Il est \u00e9galement int\u00e9ressant de noter les diff\u00e9rences d&#039;attentes des consommateurs europ\u00e9ens vis-\u00e0-vis de la cuisine italienne, \u00e0 laquelle la pizza appartient de plein droit\u00a0: 661\u00a0% des consommateurs allemands attendent des produits et des mati\u00e8res premi\u00e8res de haute qualit\u00e9, tandis qu&#039;en France, cette attente concerne les produits et pr\u00e9parations faits maison. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le d\u00e9fi : se diff\u00e9rencier<\/h2>\n\n\n\n<p>Comme on le voit, le march\u00e9 de la pizza devrait cro\u00eetre en Europe. Rien que dans la r\u00e9gion occidentale, la valeur est <a href=\"https:\/\/www.statista.com\/statistics\/499277\/global-market-value-of-the-pizza-industry\/\">environ 60 milliards<\/a>, soit l&#039;\u00e9quivalent de toute l&#039;Am\u00e9rique du Nord. Malgr\u00e9 les pr\u00e8s de 70\u00a0000 pizzerias et les multiples cha\u00eenes qui se partagent la plus grande part du march\u00e9, la pizza repr\u00e9sente toujours une excellente opportunit\u00e9 pour les restaurateurs. <\/p>\n\n\n\n<p>Le v\u00e9ritable d\u00e9fi r\u00e9side plut\u00f4t dans la diff\u00e9renciation : comment entrer dans l\u2019esprit du consommateur <strong>quand il y a une pizzeria \u00e0 chaque p\u00e2t\u00e9 de maisons ?<\/strong> Comment valoriser l&#039;originalit\u00e9 de l&#039;offre\u00a0? Comment saisir l&#039;opportunit\u00e9 de croissance du march\u00e9 tout en gagnant face \u00e0 la concurrence et aux grandes enseignes\u00a0?<\/p>\n\n\n\n<p>Nous pouvons r\u00e9pondre par la qualit\u00e9 de l&#039;offre et de l&#039;exp\u00e9rience, le rapport qualit\u00e9\/prix, la comp\u00e9tence et la gentillesse du personnel, mais nous aimerions ajouter deux \u00e9l\u00e9ments de r\u00e9flexion, qui <strong>ils nous emm\u00e8nent directement \u00e0 la Pinsa romaine<\/strong>: <strong>la capacit\u00e9 \u00e0 s\u2019adapter aux tendances de consommation et \u00e0 l\u2019innovation.<\/strong> Regardons-les individuellement. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Suivre les tendances de consommation<\/h3>\n\n\n\n<p>Malgr\u00e9 l\u2019explosion de l\u2019offre, en Italie, nous sommes habitu\u00e9s \u00e0 <em>interpr\u00e9ter <\/em>La pizza est un plat traditionnel, associ\u00e9 \u00e0 une douzaine de recettes. Si cela est vrai \u00e0 premi\u00e8re vue, <strong>Les tendances fondamentales en mati\u00e8re de consommation alimentaire sont en constante \u00e9volution, comme dans tous les pays du monde. <\/strong><\/p>\n\n\n\n<p>Pensez \u00e0 la n\u00e9cessit\u00e9 d&#039;une cuisine saine et l\u00e9g\u00e8re m\u00eame au restaurant, une tendance qui \u00e9tait \u00e0 peine \u00e9voqu\u00e9e il y a 20 ans et qui ne peut \u00eatre ignor\u00e9e aujourd&#039;hui ; ou encore \u00e0 l&#039;attention toujours croissante port\u00e9e \u00e0 la cuisine durable et <strong>\u00e0 l&#039;int\u00e9gration d&#039;options v\u00e9g\u00e9taliennes et v\u00e9g\u00e9tariennes dans les menus<\/strong>Suivre l\u2019\u00e9volution des tendances de consommation alimentaire est le premier facteur diff\u00e9renciant.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Le pouvoir de l&#039;innovation<\/strong><\/h3>\n\n\n\n<p>Pour se d\u00e9marquer, <strong>les restaurateurs doivent se concentrer sur l&#039;innovation<\/strong>, c&#039;est-\u00e0-dire qu&#039;ils doivent s&#039;efforcer de d\u00e9passer les recettes et les m\u00e9thodes de service traditionnelles. Innover signifie ici introduire de nouvelles id\u00e9es et techniques qui am\u00e9liorent l&#039;exp\u00e9rience client. Voici quelques pistes\u00a0: <strong>ingr\u00e9dients raffin\u00e9s tels que des farines alternatives et des condiments gastronomiques<\/strong>, exp\u00e9rimentation de techniques de cuisson particuli\u00e8res qui rehaussent les saveurs et la consistance des aliments. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pinsa cr\u00e9e la diff\u00e9renciation<\/h2>\n\n\n\n<p>Nous d\u00e9finissons g\u00e9n\u00e9ralement pinsa comme un synonyme de <strong>innovation dans le monde de la pizza<\/strong>. En y regardant de plus pr\u00e8s, proposer de la pinsa aux clients aide les restaurateurs \u00e0 se diff\u00e9rencier sans trop d&#039;effort, car elle est innovante en soi et suit les tendances alimentaires des clients. <\/p>\n\n\n\n<p>Le succ\u00e8s de la pinsa, qui ne peut \u00e9videmment pas \u00eatre compar\u00e9 \u00e0 celui d&#039;un produit vieux de plusieurs si\u00e8cles (la pinsa est n\u00e9e en 2001), est d\u00fb pr\u00e9cis\u00e9ment \u00e0 la volont\u00e9 de <strong>d\u00e9velopper un march\u00e9 rest\u00e9 trop longtemps bloqu\u00e9 sur ses positions<\/strong> et incapable de satisfaire le d\u00e9sir de l\u00e9g\u00e8ret\u00e9, de go\u00fbt et de digestibilit\u00e9 que les gens r\u00e9clamaient \u00e0 grands cris. <\/p>\n\n\n\n<p>Alors oui, <strong>proposer du pinsa aux clients est un pas en avant dans la bonne direction<\/strong>Le fait que ce produit soit peu connu dans certains pays constitue un atout majeur pour les restaurateurs\u00a0: il suscite la curiosit\u00e9, les gens le connaissent peu, il est nouveau et innovant. Cependant, nous devons <strong>\u00eatre capable de le proposer correctement<\/strong>: ce n\u2019est pas une pizza de forme ovale, mais quelque chose de totalement nouveau \u00e0 partir de son \u00ab c\u0153ur \u00bb, c\u2019est-\u00e0-dire les farines et la p\u00e2te. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Est-il pr\u00e9f\u00e9rable d\u2019ouvrir une pizzeria ou une pinseria en Europe ?<\/h2>\n\n\n\n<p>Il est impossible de donner une r\u00e9ponse claire \u00e0 cette question, <strong>\u00e9tant donn\u00e9 les variables infinies en jeu<\/strong>. <\/p>\n\n\n\n<p>En fait, <strong>aucun restaurateur n&#039;est oblig\u00e9 de choisir<\/strong>:nous vous sugg\u00e9rons d&#039;offrir de la pinsa pour vous diff\u00e9rencier et r\u00e9ussir, mais vous pouvez facilement l&#039;int\u00e9grer dans votre propre pizzeria et <strong>dans le menu \u00ab classique \u00bb que les clients ont toujours appr\u00e9ci\u00e9.<\/strong> Surtout pour ceux qui ont d\u00e9j\u00e0 une entreprise en activit\u00e9, l\u2019approche progressive est \u00e9videmment gagnante : on commence par combiner les deux propositions et on se concentre ensuite davantage sur celle qui offre les meilleures perspectives de succ\u00e8s \u00e0 long terme. <\/p>\n\n\n\n<p>Si vous ouvrez un nouvel endroit, cela d\u00e9pend beaucoup de votre envie d&#039;oser et de votre propension au risque : <strong>Pinsa est une innovation et peut \u00eatre un succ\u00e8s sans pr\u00e9c\u00e9dent<\/strong>, mais on ne peut \u00e9videmment pas compter sur le m\u00eame <em>nom<\/em>, sur la reconnaissabilit\u00e9 et la tradition s\u00e9culaire de la pizza ; son succ\u00e8s est fortement li\u00e9 <strong>\u00e0 la qualit\u00e9 de l&#039;offre, \u00e0 la capacit\u00e9 \u00e0 valoriser le contenu innovant et \u00e0 transmettre le bon message \u00e0 un consommateur qui ne le conna\u00eet pas forc\u00e9ment<\/strong> Oui. C&#039;est un d\u00e9fi, bien s\u00fbr, mais les pr\u00e9misses sont excellentes\u00a0: en Italie, les ventes de pinsa en supermarch\u00e9 ont augment\u00e9 de 401\u00a0TP7T l&#039;an dernier, signe que le produit est appr\u00e9ci\u00e9.
