Fournir des aliments s\u00fbrs et de qualit\u00e9 au consommateur final est une exigence primordiale, non seulement pour les producteurs, mais aussi pour tous les acteurs de la cha\u00eene alimentaire. La conservation joue un r\u00f4le essentiel dans ce processus.<\/p>\n\n\n\n<p>Lorsqu&#039;on s&#039;int\u00e9resse \u00e0 la conservation de la pinsa, beaucoup se demandent s&#039;il est pr\u00e9f\u00e9rable de la conserver au r\u00e9frig\u00e9rateur ou \u00e0 temp\u00e9rature ambiante, ou s&#039;il existe \u00e9galement une version congel\u00e9e. Dans ce cas, il est important de distinguer le surgel\u00e9 du congel\u00e9. Par ailleurs, que se passe-t-il si, apr\u00e8s ouverture du contenant, on ne peut pas consommer la Nuvola imm\u00e9diatement, ou plut\u00f4t apr\u00e8s les cinq minutes de cuisson habituelles\u00a0?<\/p>\n\n\n\n<p>Dans cet article, nous allons essayer de fournir toutes les informations de base pour stocker correctement la pinsa et pour rem\u00e9dier aux erreurs ou aux simples impr\u00e9vus.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conservation des aliments : le grand alli\u00e9 est le froid <\/h2>\n\n\n\n<p>Toute substance organique est sujette \u00e0 la d\u00e9gradation car ses composants subissent des processus d&#039;alt\u00e9ration chimique plus ou moins rapides selon les conditions de stockage et le type d&#039;aliment. Les principaux acc\u00e9l\u00e9rateurs sont l&#039;air, l&#039;eau et la lumi\u00e8re.<\/p>\n\n\n\n<p>Il existe des diff\u00e9rences importantes entre les produits de boulangerie, mais la plupart des gens sont conscients du durcissement rapide du pain ordinaire, d\u00fb \u00e0 la perte d&#039;humidit\u00e9 et au durcissement simultan\u00e9 de l&#039;amidon. De plus, le pain est vuln\u00e9rable \u00e0 la formation de moisissures.<\/p>\n\n\n\n<p>Des processus tels que la cong\u00e9lation ou la surg\u00e9lation des aliments ont tendance \u00e0 bloquer, ou plut\u00f4t \u00e0 ralentir, la croissance des micro-organismes et l&#039;activit\u00e9 enzymatique qui d\u00e9terminent l&#039;alt\u00e9ration des caract\u00e9ristiques organoleptiques et la d\u00e9t\u00e9rioration des aliments.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Gr\u00e2ce \u00e0 la cong\u00e9lation, facile \u00e0 r\u00e9aliser m\u00eame avec un cong\u00e9lateur domestique, les aliments sont port\u00e9s \u00e0 une temp\u00e9rature comprise entre -7\u00b0 et -12\u00b0, voire -18\u00b0 pour la viande et le poisson. C&#039;est une m\u00e9thode efficace pour prolonger la conservation des aliments, mais elle entra\u00eene une perte de certaines propri\u00e9t\u00e9s organoleptiques. M\u00eame congel\u00e9s, les aliments ne se conservent g\u00e9n\u00e9ralement pas plus de quelques mois.<br><\/li>\n\n\n\n<li>La surg\u00e9lation est un proc\u00e9d\u00e9 industriel r\u00e9glement\u00e9 qui vise \u00e0 amener les aliments \u00e0 des temp\u00e9ratures inf\u00e9rieures \u00e0 -18 \u00b0C dans les plus brefs d\u00e9lais. On l&#039;appelle aussi refroidissement (n\u00e9gatif) pour souligner la rapidit\u00e9 du processus. La surg\u00e9lation permet de conserver les aliments plus longtemps sans perdre leurs propri\u00e9t\u00e9s nutritionnelles. Bien entendu, la cha\u00eene du froid doit \u00eatre respect\u00e9e tout au long du parcours des aliments, de la production au point de vente.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Conservation de la Pinsa : jusqu&#039;\u00e0 18 mois, si congel\u00e9e<\/h2>\n\n\n\n<p>La dur\u00e9e de conservation de la pince Di Marco d\u00e9pend du type de produit et de la gamme de produits \u00e0 laquelle elle appartient.<\/p>\n\n\n\n<p>Pour le march\u00e9 professionnel (horeca), c&#039;est-\u00e0-dire la restauration collective, Di Marco propose une gamme compl\u00e8te de bases fabriqu\u00e9es manuellement et totalement exemptes de conservateurs. L&#039;absence de conservateurs n\u00e9cessite le recours \u00e0 la surg\u00e9lation\u00a0; ces bases sont en effet pr\u00e9alablement refroidies \u00e0 -18\u00a0\u00b0C et, gr\u00e2ce au respect de la cha\u00eene du froid, peuvent \u00eatre conserv\u00e9es jusqu&#039;\u00e0 18\u00a0mois.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">R\u00e9frig\u00e9rateur ou ambiant ?<\/h3>\n\n\n\n<p>La conservation du produit Nuvola destin\u00e9 au consommateur final et vendu dans les magasins GDO est g\u00e9r\u00e9e diff\u00e9remment. Nuvola n&#039;est pas surgel\u00e9, mais pr\u00e9sent\u00e9 dans les rayons r\u00e9frig\u00e9r\u00e9s en deux versions\u00a0: Classique et Multic\u00e9r\u00e9ales. De plus, la version Classique est \u00e9galement propos\u00e9e hors des r\u00e9frig\u00e9rateurs en version Ambiante. Dans les deux cas, le produit est conditionn\u00e9 sous atmosph\u00e8re protectrice pour garantir sa fra\u00eecheur et une conservation prolong\u00e9e, sans conservateurs chimiques.<\/p>\n\n\n\n<p>La Nuvola \u00ab\u00a0du r\u00e9frig\u00e9rateur\u00a0\u00bb, en version Classique et Multic\u00e9r\u00e9ales, se conserve au r\u00e9frig\u00e9rateur \u00e0 une temp\u00e9rature comprise entre 0 \u00b0C et 4 \u00b0C. La version Ambiante, quant \u00e0 elle, se conserve \u00e0 temp\u00e9rature ambiante, mais il est important de v\u00e9rifier la date de p\u00e9remption et de conserver le produit dans un endroit frais et sec.<\/p>\n\n\n\n<p>Nuvola Ambient est plus facile \u00e0 pr\u00e9senter sur le point de vente et ne prend pas de place dans le r\u00e9frig\u00e9rateur, laissant ainsi la place aux autres aliments. Ce qui le distingue des produits r\u00e9frig\u00e9r\u00e9s est l&#039;ajout d&#039;acide sorbique, un conservateur naturel qui garantit une longue conservation sans alt\u00e9rer le go\u00fbt, la consistance et la fra\u00eecheur du produit. Dans ce cas \u00e9galement, Nuvola est conditionn\u00e9 sous atmosph\u00e8re protectrice afin de prolonger sa conservation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La broche Di Marco peut-elle \u00eatre conserv\u00e9e une fois ouverte ?<\/h3>\n\n\n\n<p>Enfin, que se passe-t-il si nous ouvrons accidentellement l&#039;emballage de Nuvola et que, suite \u00e0 un \u00e9v\u00e9nement impr\u00e9vu, nous ne pouvons pas le consommer imm\u00e9diatement\u00a0? Ou, plus fr\u00e9quemment encore, si nous achetons un paquet de deux produits mais ne pouvons en consommer qu&#039;un seul imm\u00e9diatement\u00a0?<\/p>\n\n\n\n<p>Bien s\u00fbr, il ne faut rien jeter, mais il faut \u00eatre conscient de consommer rapidement. En attendant, il existe au moins deux possibilit\u00e9s pour prolonger la dur\u00e9e de conservation\u00a0:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Conserver au r\u00e9frig\u00e9rateur en filmant le produit. Il est toutefois important de consommer la pinsa dans les jours qui suivent.<\/li>\n\n\n\n<li>Technique de mise sous vide, si vous disposez de la machine ad\u00e9quate.
