Apr\u00e8s les boulettes de viande \u00e0 la sauce tomate, nous c\u00e9l\u00e9brons aujourd&#039;hui la cuisine sicilienne dans l&#039;une de ses versions les plus parfum\u00e9es et conviviales.<\/p>\n\n\n\n<p>La caponata, plat embl\u00e9matique du sud de l&#039;Italie, est un mariage subtil de l\u00e9gumes, c\u00e2pres, olives, raisins secs et pignons de pin : des saveurs intenses qui racontent l&#039;histoire d&#039;une r\u00e9gion authentique et g\u00e9n\u00e9reuse. Gennaro y ajoute la douceur du fromage de ch\u00e8vre pour un \u00e9quilibre parfait, le tout servi sur une Pinsa Di Marco croustillante et parfum\u00e9e. Le r\u00e9sultat ? Pr\u00e9parez la caponata<\/p>\n\n\n\n<p>Coupez l&#039;aubergine en d\u00e9s. Faites-la frire dans une grande quantit\u00e9 d&#039;huile v\u00e9g\u00e9tale bien chaude pendant 2 \u00e0 3 minutes, jusqu&#039;\u00e0 ce qu&#039;elle soit l\u00e9g\u00e8rement dor\u00e9e. \u00c9gouttez-la sur du papier absorbant.<\/p>\n\n\n\n<p>Dans une po\u00eale propre, faites chauffer l&#039;huile d&#039;olive et faites revenir l&#039;ail, le c\u00e9leri et les poivrons pendant 4 minutes. Ajoutez l&#039;oignon et poursuivez la cuisson pendant 10 minutes. Ajoutez les c\u00e2pres et les olives, faites revenir jusqu&#039;\u00e0 ce que le m\u00e9lange soit parfum\u00e9, puis ajoutez l&#039;aubergine et salez.<\/p>\n\n\n\n<p>Dans un autre r\u00e9cipient, m\u00e9langez le vinaigre, le sucre et la pur\u00e9e de tomates. Versez ce m\u00e9lange au centre de la po\u00eale, augmentez le feu, ajoutez les pignons de pin et les raisins secs, et laissez mijoter 2 minutes. Retirez du feu et incorporez le basilic.<\/p>\n\n\n\n<p>2. Assembler et cuire les pinsa<\/p>\n\n\n\n<p>Pr\u00e9chauffez le four \u00e0 240 \u00b0C (ou 220 \u00b0C en chaleur tournante). Faites cuire les Di Marco pinse pendant 5 minutes.<\/p>\n\n\n\n<p>Sortez du four, ajoutez la caponata et parsemez de fromage de ch\u00e8vre. Remettez au four 4 minutes.
