Et nous savons aussi \u00e0 quel point la <a href=\"https:\/\/www.pinsadimarco.com\/pinsa-ricette-estive-ingredienti-per-bilanciare-gusto-e-leggerezza\/\">La pinsa s'y pr\u00eate parfaitement<\/a> \u00e0 \u00eatre mise en valeur avec <strong>des ingr\u00e9dients frais et l\u00e9gers.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les professionnels de la restauration doivent toutefois tenir compte d\u2019un autre aspect que le menu : en \u00e9t\u00e9, ce ne sont pas seulement les envies culinaires des clients qui changent, mais <strong>ainsi que la mani\u00e8re dont ils abordent la consommation hors domicile.<\/strong> Les rythmes des soir\u00e9es changent, tout comme les moments de convivialit\u00e9, la dur\u00e9e des repas, la composition des commandes et m\u00eame <strong>les attentes vis-\u00e0-vis de cette exp\u00e9rience.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C'est dans cette optique que nous souhaitons aborder ce sujet. Nous ne nous concentrerons donc pas sur les meilleurs ingr\u00e9dients pour \u00e9laborer un menu estival efficace, mais sur la mani\u00e8re d'adapter l'offre des pizzerias et des pinserias \u00e0 <strong>diff\u00e9rentes fa\u00e7ons de consommer<\/strong>. L'objectif ? Transformer les besoins li\u00e9s \u00e0 la saison estivale en une opportunit\u00e9 d'am\u00e9liorer l'organisation et l'offre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L'\u00e9t\u00e9 et la restauration : ce ne sont pas seulement les go\u00fbts qui changent, mais aussi les modes de consommation<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Comme nous le disions, <strong>En \u00e9t\u00e9, les habitudes changent<\/strong>, les rythmes et m\u00eame la relation avec les clients. Pour les pizzerias et les pinserias, cela signifie faire face \u00e0 <strong>des tendances diff\u00e9rentes de celles observ\u00e9es \u00e0 d'autres p\u00e9riodes de l'ann\u00e9e<\/strong>.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>En \u00e9t\u00e9, les arriv\u00e9es ont tendance \u00e0 <strong>se r\u00e9partir sur toute la soir\u00e9e ;<\/strong><\/li>\n\n\n\n<li><strong>Les ap\u00e9ros s'\u00e9ternisent<\/strong> et les repas deviennent plus d\u00e9contract\u00e9s ;<\/li>\n\n\n\n<li>La demande de <strong>partage \u00e0 table ;<\/strong><\/li>\n\n\n\n<li><strong>Clients occasionnels<\/strong>, ainsi que, le cas \u00e9ch\u00e9ant, les touristes, ont une incidence plus importante sur les flux ;<\/li>\n\n\n\n<li>Les gens pr\u00e9f\u00e8rent <strong>des plats l\u00e9gers plut\u00f4t que copieux<\/strong>;<\/li>\n\n\n\n<li><strong>Les compromis disparaissent<\/strong>: les gens ont tendance \u00e0 s'attarder moins longtemps ou, au contraire, \u00e0 profiter du repas de mani\u00e8re plus d\u00e9tendue et conviviale ;<\/li>\n\n\n\n<li>La tol\u00e9rance envers <strong>les longues attentes<\/strong>.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">L'\u00e9t\u00e9 met les pizzerias et les \u00ab pinserias \u00bb \u00e0 rude \u00e9preuve<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">L'\u00e9t\u00e9 est la p\u00e9riode la plus d\u00e9licate et la plus exigeante de l'ann\u00e9e pour les pizzerias et les \u00ab pinserias \u00bb, car ces nouvelles dynamiques <strong>augmentent la pression sur chaque zone du local.<\/strong>&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>L\u2019 <strong>gestion de la salle<\/strong> devient plus complexe ;<\/li>\n\n\n\n<li>Les flux sont <strong>moins lin\u00e9aires ;<\/strong><\/li>\n\n\n\n<li>La cuisine doit s'adapter \u00e0 <strong>commandes plus fragment\u00e9es, variables <\/strong>et difficiles \u00e0 g\u00e9rer pendant les p\u00e9riodes de forte affluence.\u00a0<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><br>\u00c0 cela s'ajoutent les difficult\u00e9s typiques de la saison estivale, qui viennent compliquer encore davantage la situation : <strong>effectif r\u00e9duit en raison des cong\u00e9s,<\/strong> de nouveaux collaborateurs saisonniers \u00e0 int\u00e9grer rapidement et le chevauchement constant entre le service en salle, les plats \u00e0 emporter et la livraison aux m\u00eames cr\u00e9neaux horaires.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Comment \u00e9laborer une offre adapt\u00e9e au rythme estival<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Comment bien g\u00e9rer la pression estivale ? La r\u00e9ponse pourrait sembler simple : <strong>augmenter les effectifs.<\/strong> Et de nombreux \u00e9tablissements font exactement cela, mais il n'est pas toujours facile de trouver de nouvelles ressources et, surtout, <strong>On ne peut pas augmenter ind\u00e9finiment les effectifs et les co\u00fbts.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C'est pourquoi, outre le renforcement de l'\u00e9quipe lorsque cela s'av\u00e8re n\u00e9cessaire, il devient essentiel <strong>optimiser l'offre, <\/strong>c'est-\u00e0-dire la concevoir de mani\u00e8re plus intelligente et plus durable pour le travail quotidien en cuisine et en salle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L'objectif est de parvenir \u00e0 g\u00e9rer un plus grand nombre de clients et des commandes plus complexes <strong>sans compromettre la fluidit\u00e9, la qualit\u00e9 du service et la viabilit\u00e9 \u00e9conomique<\/strong>, m\u00eame dans les moments les plus tendus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Par exemple, cela peut \u00eatre utile :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>simplifier les pr\u00e9parations complexes <\/strong>\u00e0 g\u00e9rer en p\u00e9riode de forte affluence ;<\/li>\n\n\n\n<li>privil\u00e9gier <strong>ingr\u00e9dients communs \u00e0 plusieurs plats du menu ;<\/strong><\/li>\n\n\n\n<li><strong>pr\u00e9parer \u00e0 l'avance quelques \u00e9l\u00e9ments de base<\/strong> pour acc\u00e9l\u00e9rer la sortie et l'assemblage ;<\/li>\n\n\n\n<li><strong>all\u00e9ger le menu <\/strong>sans pour autant renoncer \u00e0 la diversit\u00e9 per\u00e7ue ;<\/li>\n\n\n\n<li>\u00e9laborer des propositions <strong>facilement personnalisables.<\/strong><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">La mani\u00e8re dont l'offre est structur\u00e9e peut \u00e9galement avoir une grande incidence sur la fluidit\u00e9 du service.
