Typically, the flour mix used for pinsa consists of high-quality wheat flour, soy flour, rice flour and dried wheat sourdough. 
  • Wheat flour is the main ingredient. As long as high quality ingredients are used, it is what gives the product its texture and characteristic flavour;
  • Rice flour is associated with the product's soft inside and crispy outside, distinctive elements of pinsa romana;
  • Soy flour replaces animal fats and is a fundamental ingredient for the product's digestibility, crispiness and even colour. 
The mix of flours can vary slightly and, above all, is constantly evolving: research is intensive and is constantly improving the product. In Di Marco flours, moreover, the formula is secret to preserve the identity and uniqueness of the product itself.

A true pillar of the selection, Pinsa Romana Expert - Giallo is a mix of '0' type soft wheat, rice, soy and dried wheat sourdough, a totally vegan flour recommended for long-rising doughs, between 24 and 120 hours. This mixture gives pinsa its unmistakable balance of crunchiness, taste and digestibility.
On the other hand, Pinsa Romana Expert Blu has a significant addition of active mother dough. The dough made with this type of flour is particularly digestible and, therefore, suitable for those who want to consume, or offer their customers, a perfect balance between quality and lightness. It’s definitely interesting, moreover, for those who have some digestive problems with classic industrially made bakery products. The rising time of Pinsa Romana Expert Blu is shorter than the previous product, between 4 and 48 hours. 
Pinsa Romana Expert Più Fibra is a mix of soft wheat, wheat fibre, rice, soy and dried biga, with the addition of wheat fibre, which gives it a good nutritional value. This flour is perfect for those seeking a higher fibre intake and a product that is absolutely healthy and pleasing to the palate. 

Pinsa Romana multigrain, the result of research

Above we stated the importance of research in creating tasty and light products that satisfy the palate and guarantee good digestibility. A perfect example is Pinsa Romana multigrain, obtained by adding oat, rye, barley malt, barley flours and pumpkin, sunflower and flax seeds to the traditional mix, which give the product a rustic, wholesome flavour and the unmistakable aroma of ancient grains.
