Rustic taste and mix of seeds: Di Marco presents the new frozen Multicereal base

Rustic and wholesome flavours bring to mind the smells and tastes of traditional and popular cuisine, sometimes transporting us to distant childhood memories. Today there is a particular interest in the world of baking and catering for this type of flavours and many recipes have seen the introduction of wholemeal flours and of cereal mix.

In our laboratories we have been using different types of flours and cereals for our products for some time now: this year the new Multigrain flour for Pinsa Romana. Now we are happy to present you the new frozen base of original Pinsa Romana in Multicereal version.

Easy to prepare, light and healthy, the Multigrain bases Di Marco pre-cooked and frozen are ideal for pinserias, pizzerias, pubs, bistros and other businesses interested in including wholemeal dough in their menu, thus responding to a need increasingly felt by a significant portion of consumers.

THE MULTICEREAL BASE DI MARCO: GENUINE INGREDIENTS AND RUSTIC FLAVOUR

The ingredients of the Multicereal bases are genuine: to the characteristic mix of flours for Pinsa Romana Di Marco, which includes wheat, rice and soy, combined with dried wheat sourdough, EVO oil, salt and yeast, have been added oats, rye, barley malt, pumpkin seeds, flax seeds and sunflower seeds, which give a surprising rustic taste with the characteristic scent of ancient grains.

After 72 hours of slow leavening, the dough for the Multicereal bases is rolled out and worked by hand by the expert Di Marco pinsaioli artisans. As with the other products in the Di Marco frozen line, each base is then subjected to a quick pre-cooking and finally frozen to preserve intact the properties and freshness typical of an original Pinsa Romana just out of the oven.

The new bases are preserved up to 18 months in the freezer at -18°. When ready to use, they defrost in a few minutes at room temperature and require cooking times that vary depending on the type of oven: 4-5 minutes in a static oven at 300° or 7-8 minutes in a fan oven at 250°.

The addition of seeds, fibers and cereals to an already light and digestible dough like that of Pinsa Romana has expanded the rich range of Di Marco frozen products, responding to the consumer needs of a public increasingly attentive to health and the correct intake of fiber in their diet.
