SUPERIOR PROSECCO
From the hills of Conegliano Valdobbiadene, about 100 km from the Dolomites, comes to our tables the Prosecco Superiore DOCG. Its success began with the foundation of the first Oenological School of Conegliano in 1876, the first of its kind in Italy: in a short time this wine achieved important goals, including the Controlled and Guaranteed Designation of Origin.
Today the production of Prosecco is UNESCO World Heritage Site and is one of the most appreciated Italian wines in the world. Fresh, versatile and moderately alcoholic, Conegliano Valdobbiadene lends itself to many types of pairings, including that with our beloved Pinsa Romana.
He is the king of theaperitif, but thanks to the variability of the sugar dosage, it is also suitable for consumption during main meals, especially in its Brut version. Given its elegant and never invasive personality, it lends itself well to those recipes that allow the aromas and fragrances of the raw materials to emerge.
This is why the Pinsa Romana, with its crunchiness and its aroma, is an ideal combination, especially when stuffed with quality cheeses and cured meats.
SPARKLING WINE FRANCIACORTA
The Franciacorta Sparkling Wine It is considered one of the best sparkling wines obtained thanks to the Classic Italian Method(equivalent of the champenoise method) from the refermentation in the bottle.
The production of Franciacorta began in the early 1960s when a series of producers in the province of Brescia set themselves the goal of producing a type of wine capable of competing with the sparkling wines from beyond the Alps.
On the nose, this wine strikes for its refinement and its balance: has fruity and toasted notes, dense and consistent, which end with an intriguing citrus taste. This aromatic complexity makes it perfect for any type of meal, but it is especially excellent for enhancing creamy cheeses.
But we will also reveal another tasty combination: try sipping a glass of Franciacorta next to a Pinsa Romana with sweet filling, made with fruit and a delicate custard. You will feel how good it is!

And finally he, Monsieur Le Champagne! Although our Italian sparkling wines have nothing to envy their French counterparts, the latter still has many admirers.
Champagne is one of the few wines that has been attributed to an inventor, the Benedictine abbot Dom Pierre Perignon: it was the monk himself who defined the rules for the production of champagne, preferring a gentle pressing to obtain a clear must even from black grapes.
